Rice Paper Rolls – Low FODMAP
FODMAP Recipe
Ingredients
- 250 g Vermicelli noodles
- 1 Carrot grated
- 1 Cucumber halved and thinly sliced
- 1 Red capsicum seeded and thinly sliced
- ¼ cup Coriander fresh and chopped
- 8 g Spring onion only tops finely chopped
- 150 g Prawns or anything other cooked meat, fish or tofu)
- ½ Lime juiced
- 1 tbsp Fish sauce (soy sauces for a vegetarian option)
- ½ tsp Brown sugar
- Rice paper x8
Instructions
- Put vermicelli into a bowl and cover with boiling water. Let stand until the noodles are soft then drain. Cut noodles into short lengths with kitchen scissors
- Whisk together lime juice, fish sauce and brown sugar, set aside.
- Soak rice paper round in cold water until just soft and pliable. Layer rice noodles, vegetables and prawns on therice paper. Fold in the sides as you roll to form a neat package. Repeat with the remaining rice paper rounds andfilling.
- Serve rolls with the dressing.
