Banana, carrot & zucchini muffins
Ingredients
- 1 cup wholemeal self-raising flour
- 1 banana
- 1 carrot
- ½ small zucchini
- 1 Egg
- ⅓ cup Reduced-fat milk
- 2 tbsp honey or pure maple syrup
- 1 tsp cinnamon
Instructions
- Preheat the oven to 180ºc and line a muffin tin with 6 paper cases
- Add flour, egg, milk, honey, and cinnamon together in a bowl and stir until combined
- Mash the banana and grate the carrot and zucchini, add these to the bowl and stir until combined
- Spoon the mixture into patty cases and bake for 15 minutes or until golden
