
Grilled Veg Pizza
Ingredients
4 wholemeal pita breads
4 tbsp salt reduced tomato paste salt reduced
1 eggplant sliced
2 medium zucchini sliced into rounds
1 red capsicum seeds removed, cut into small pieces
2 carrot grated
1 cherry tomatoes sliced into halves
1 cup cottage cheese
Instructions
- Pre-heat the over to 180°C
- Heat the olive oil in a frying pan over medium heat
- Add the sliced eggplant, zucchini and capsicum and cook for around 4 minutes or until browned on both sides
- Spread the tomato paste onto the pita bread rounds, add the grated carrot, layer up the grilled vegetables, then the cherry tomatoes and top with the cottage cheese
- Bake in the oven for 10-15 minutes or until the bases are crispy and the cheese is melted
