  • 0.5 400g tin of brown lentils 1/2 cup
  • 50 g Cos lettuce 1 cup
  • 1 large tomato chopped
  • ½ cucumber chopped
  • ½ red capsicum chopped
  • ½ spring onion chopped
  • 30 g Feta cheese small cubes
  • 1 tbsp balsamic vinegar
  • 1 tbsp Drizzle extra virgin olive oil extra virgin
  • 50 g reduced-fat plain yoghurt increase quantity if preferred
