Oat and Banana Pancakes – Low FODMAP

FODMAP Recipe

Ingredients

  • 1 cup rolled oats
  • cup oat bran
  • 1 cup rice flour
  • 2 eggs
  • banana mashed
  • 2 tsp baking powder
  • ¾ tsp ground cinnamon

Instructions
 

  • Add all dry ingredients into a food processor and blend to a fine powder
  • Add the banana and eggs and gradully pour in the milk, mix well until the batter has a slightly runny consistency.Add more milk if required
  • Rest batter for 15 minutes. The mixture may thicken during this time so if too thick to spoon into frypan, add moremilk
  • Heat some butter or spray oil in a frypan over medium heat. Spoon the mixture (2 heaped tablespoon per pancake)into the frying pan. Cook until bubbles start to form on top, then flip and cook for another minute.
  • Serve pancakes per person and top with your favourite low FODMAP fruits and a splash of maple syrup.
