Scrambled Tofu on Toast – Low FODMAP
FODMAP Recipe
Ingredients
- 2 tbsp spring onion
- ½ red capsicums seeded and diced
- ½ carrot grated
- ground turmeric pinch
- 1 tbsp soy sauce
- 1 tsp sesame seeds toasted
- ½ cup firm tofu crumbled
- multigrain bread x1 slice
Instructions
- Heat oil in a fry pan and sauté spring onion, capsicum and carrots for 2-3 minutes.
- Add the turmeric, soy sauce and sesame seeds and stir through. Fry for a further 2-3 minutes.
- Add in the tofu and cook for a further 4-5 minutes, on a low heat, breaking up any big pieces and season to taste
- Serve the scrambled tofu on a slice of toast.
