Thai chicken burger
Ingredients
- 2 skinless chicken breast
- 1.5 red thai curry paste
- 1 Drizzle extra virgin olive oil
- ½ red onion
- 1 avocado
- 1 large tomato
- 1 cup lettuce or spinach or rocket leaves
- ½ Lebanese cucumber
- 2 tbsp reduced-fat plain yoghurt
- 4 wholegrain buns
Instructions
- Slice chicken breasts in half, horizontally. Spread the curry paste evenly over the chicken breasts and sit in a bowl for 5 minutes to marinate
- Prepare the salad ingredients – slice the onion, tomato, avocado and cucumber
- Heat olive oil in a large frying pan and cook the chicken breasts for approximately 5 minutes on each side or until cooked through and golden
- Slice the buns in half and assemble the burgers – bottom bun, avocado, tomato, onion, cucumber, chicken, lettuce, yoghurt and the top of the bun
