Heat the olive oil in a frying pan over medium heat
Add the sliced eggplant, zucchini and capsicum and cook for around 4 minutes or until browned on both sides
Spread the tomato paste onto the pita bread rounds, add the grated carrot, layer up the grilled vegetables, then the cherry tomatoes and top with the cottage cheese
Bake in the oven for 10-15 minutes or until the bases are crispy and the cheese is melted
