skinless chicken breast

red thai curry paste

Drizzle extra virgin olive oil

red onion

avocado

large tomato

lettuce or spinach or rocket leaves
½
Lebanese cucumber

tbsp
reduced-fat plain yoghurt

wholegrain buns
Instructions
Slice chicken breasts in half, horizontally. Spread the curry paste evenly over the chicken breasts and sit in a bowl for 5 minutes to marinate
Prepare the salad ingredients - slice the onion, tomato, avocado and cucumber
Heat olive oil in a large frying pan and cook the chicken breasts for approximately 5 minutes on each side or until cooked through and golden
Slice the buns in half and assemble the burgers - bottom bun, avocado, tomato, onion, cucumber, chicken, lettuce, yoghurt and the top of the bun
